Potato Canada Gold is a root vegetable that grows well in different parts of the country and is praised for its resilience and overall market performance. Canada Gold has a short dormancy period, and tubers size quickly during senescence. It has higher yields, better disease resistance, and superior color, texture, and flavor compared to other yellow varieties. Canada Gold's pleasantly round roots are uniform in size and have smooth golden skin and light-yellow flesh with a moist texture and slightly sweeter flavor than Yukon Gold. Excellent table potatoes, they are ideal for boiling and baking. Potatoes are a good source of dietary fiber, magnesium, and potassium.

A Solanum tuberosum variety, commonly known as potato or Irish potato, Canada Gold is a member of the nightshade family (Solanaceae). The plant grows with a semi-upright, vining habit to about 18 to 24 inches; blooms in non-showy light-yellow flowers; and produces high yields of potatoes that store very well. The plants have moderate resistance to scab, PVY, and foliar blight. For optimal size and uniformity, harvest when the tops begin to die back in late summer to early fall.

Canada Gold potatoes grow best in sunny locations with plenty of space and fertile, freely draining soil, having an acidic pH. For best texture and flavor, keep soil evenly moist until flowering stops then cut water in half. Canada Gold has good drought tolerance.

A cool-season vegetable, one of the first to be planted in the garden, potato can be sown directly into the garden in early spring 2 to 3 weeks before the last frost date. It needs cold temperatures to germinate and grow and tolerates moderate frost.
